SOURDOUGH ADVENTURE
MY WHAT & MY WHY -
Thank you for being here and taking the time to explore what my little microbakery has to offer. At Lotus Flour, you will find sourdough breads and baked goods made with simple, quality ingredients because that's all I believe our food should contain. All sourdough loaves are fermented for at least 24 hours for optimal gut health benefits and flavor. Allergen-Friendly options avoiding the top 9+ allergens are widely offered here as well. In fact, it was allergies that started this baking journey. Allergen-Friendly options at Lotus Flour avoid gluten, dairy, egg, soy, corn, nuts, tree-nuts, shellfish, sesame, land animals, avocado, and beans. You might be wondering: why those specific allergens? Well, this leads into story time.

MY STORY -
I was never a huge baker - oftentimes, you'd find my cookies too crunchy from being overbaked....that is, if they weren't already burnt. It wasn't until I had my little one that I was thrown into the world of allergies. Thanks to our team of naturopaths, we discovered that my babe was allergic to everything I mentioned earlier and more. It was a huge shock, and since I was still nursing, I had to remove those allergens from my diet as well. It's been a year now on this heavily restricted diet, and we're still discovering new allergies - hopefully not more to go! With such a restricted diet, it was a challenge to find bread that wouldn't cause a reaction or was easily accessible. And so, the sourdough journey began. I learned how to make a gluten-free starter, then allergen-friendly sourdough, and eventually different flavors of allergen-friendly sourdough, and now even allergen-friendly muffins and cookies! Don't worry - they're no longer too crunchy or burnt! While my little one and I were enjoying our sourdough, the rest of my family was still eating store-bought bread. There's no reason for them to continue eating breads containing stabilizers, preservatives, and softeners that don't benefit their gut or overall health. So, I learned how to make a regular sourdough starter - I named him Fred. Fred wasn't going strong at first, so while I was figuring him out, a good friend was kind enough to share an established starter with me. Elisa, the starter, is a strong old lady; she dates back many years.
MY GOAL -
Fast forward to now: I continue to explore flavors and other sourdough baked goods, hoping to expand options as Lotus Flour grows. After getting to know the allergy community and listening to their stories, my goal is to share accessible allergen-friendly sourdough options and gut-friendly traditional sourdough with my community.
